1 pre-made pizza crust
3/4 cup pasta sauce
2 tablespoons grated fresh parmesan cheese
1 1/2 cups loosely packed baby spinach leaves
garlic salt
(thinly sliced ham - optional)
1 1/4 cups shredded part-skim mozzarella cheese
1/2 cup part-skim ricotta cheese
2 plum tomatoes, thinly sliced
Preheat the oven according to the directions on the pizza crust package. Put the pizza crust on the pizza pan. Spread pizza sauce evenly over crust. Sprinkle with parmesan. Top with spinach and sprinkle with garlic salt. (When I made it this weekend I had some deli ham I had to use up, so I threw it on too.) Top with mozzarella. Spoon teaspoonfuls of ricotta over the mozzarella. (Truthfully, I used more than what the recipe calls for. It was just so fun top make dollops all over the pizza and ricotta is just so yummy!) Bake according to the directions on the pizza crust package. Bake until mozzarella melts and crust browns. Top with tomato slices when it comes out of the oven.
I know it has a lot of cheese, but I felt healthy eating it just the same. It is covered with spinach, so that has to count for something! It was very tasty and super easy to put together. Like I said, I threw on some ham I had to use up, but without the ham it would make for nice meat-less meal.
